This sake is made of Fukuoka Prefecture-grown Yamadanishiki, a rice variety suitable for sake brewing, whose grains are polished to 40% of their original size. The Junmai Daiginjo sake is a product of the process of brewing from slowly fermented ingredients, collecting drops from bag-like sake filters in bottles, and storing the bottled liquid at a low temperature.
It features a strong flavor based on a good balance between a mild aroma unique to ginjo-type sake and the taste of rice.
In recognition of its excellence, this product won the Fukuoka Prefectural Governor Prize in the Junmai Daiginjo category of the 10th Fukuoka Prefecture Sake and Shochu Awards in 2022. It also received the gold medal in the sake category of International Wine Challenge (IWC) 2023, one of the largest alcoholic beverage competitions in the world.
